About Me

Nick Dowling is a Charleston-based food and beverage operator with 20+ years of experience spanning hospitality, distilling, and beverage production. He currently serves as the Captain of Operations at Charles Towne Fermentory dealing with all things beer! Previously, he opened & co-owned the acclaimed Daps Breakfast & Imbibe and served as Head Distiller at High Wire Distilling, contributing to the award-winning Jimmy Red Corn Southern Revival Bourbon. His career began in Charlotte, NC at the U.S. National Whitewater Center managing their food and beverage programs and continued on to Washington, D.C., with management roles at José Andrés’ Think Food Group, including minibar by José Andrés, where he was part of the team during Andrés’ James Beard Award win for Outstanding Chef and on to America Eats. He’s likely mid–hot dog or absolutely wrecking a whole rotisserie chicken right now.
