Michelin-trained with roots at Per Se, the Fat Duck, and Mugaritz, Joe Nierstedt has cooked for stars and high-profile clients around the globe. His career has spanned kitchens in NYC, LA, and beyond, along with work as a culinary ambassador to Spain. Joe’s fried chicken concept was called Kinfolk (Johns Island, SC). Joe brings that international perspective and refined technique into Katsubō—where ramen and fried chicken meet soulful, neighborhood hospitality.
