About Me

David Bessinger is a third-generation pitmaster and the heart behind Melvin’s BBQ, a Charleston institution rooted in family tradition since 1961. Raised in the smokehouse, David inherited more than recipes – he inherited a legacy.

Surrounded by smoke, fire, and flavor from an early age, he mastered the low-and-slow craft from the ground up. Over the years, David has led Melvin’s into a new era, blending bold innovation with time-honored Southern techniques. His signature mustard-based barbecue, smoked to perfection over all-wood, has become a beloved staple in Charleston.

David is also the creative force behind Melvin’s house-made sauces and custom rubs – crafted from scratch and inspired by the bold, familiar flavors of his upbringing. These recipes continue to define the experience at Melvin’s, bringing depth and character to everything served.

With a deep respect for tradition and a passion for pushing boundaries, David has helped turn Melvin’s into more than just a local favorite – it’s a destination for serious barbecue lovers. Whether he’s manning the pit or sharing his story, he brings authentic Southern hospitality and an uncompromising dedication to the craft.
