About Me

Chef Dean Szablewski’s path to the kitchen was forged through discipline, structure, and service — first as a United States Marine and later as a leader in some of the country’s most prestigious kitchens. His military career took him around the world, where exposure to new flavors and culinary traditions sparked a passion that paralleled the intensity and camaraderie of a kitchen brigade.

After his service, Dean trained under Chef Herman Swagger in Michigan and completed an apprenticeship in Austria before rising through the ranks at RockResorts in the Grand Tetons, where he led large, multi-outlet operations. His career continued with formative roles at The Gulf Stream Golf Club, Dorset Inn, Zero George, The Alpen Rose, Sandpiper, and Red Raven. These experiences — from fine dining rooms to rugged outdoor cooking — shaped his refined yet disciplined approach, blending Northern Italian and Austrian influences with bold global flavors inspired by his travels.

As Executive Chef of Vincent Chicco’s and Victor’s Seafood and Steak, Dean brings Marine-style leadership to the kitchen, guiding his team from within and leading by example. He believes food should nourish both body and soul, creating lasting memories through thoughtful flavors, precise technique, and a deep sense of hospitality.
