Chef Bolchoz, a Charleston native and Culinary Institute of America graduate, has built his reputation working with Peninsula Grill, The Grocery, Indaco, and overseeing Italian concepts for Indigo Road Hospitality Group. Cane Pazzo blends his Southern roots with classical Italian technique, featuring handmade pastas, wood-fired proteins, and seasonal produce drawn from Lowcountry purveyors. 

Based in Cleveland, Chef Cimino is at the helms of Cordelia, where his playful yet soulful approach to Midwestern cuisine has earned national acclaim. Known for weaving nostalgia, global inspiration, and a fearless sense of fun into his dishes, Cimino brings a distinctive voice to the table—making this collaboration a rare and exciting meeting of culinary minds.
