
About Me
Chef Michael Zentner is the executive chef and co-owner of Merci, a European-inspired bistro in Charleston’s Harleston Village, Petit Merci, a wine and provisions shop next door, and The Drifter, a culinary and design firm.
Michael’s culinary journey began at the Culinary Institute of America and spans celebrated kitchens across the country. He became the youngest chef to helm a Relais & Châteaux property at Sun Valley before joining Boston’s Gaslight Brasserie du Coin and later leading several Washington, D.C. openings for James Beard Award–winner Michael Schlow. In 2016, he returned to Boston as Culinary Director for the Aquitaine Group, overseeing nine restaurants. After relocating to Charleston in 2018, Michael served as Chef de Cuisine at the acclaimed Charleston Grill, working alongside Chef Michelle Weaver.
During the pandemic, Michael turned to breadmaking as a creative outlet—a pursuit that grew into private dinners and ultimately the launch of The Drifter in 2020, which he runs with his wife and business partner, Courtney. Today, The Drifter blends Michael’s culinary expertise with Courtney’s design vision to create exceptional experiences, from intimate dinner parties to brand activations and destination weddings.
In March 2025, the couple expanded their vision with the opening of Merci, an intimate 24-seat European bistro tucked inside a restored 1820s townhouse. Merci reflects their passion for thoughtful design, warm hospitality, and seasonally driven cuisine, offering the convivial feel of a dinner party brought to life. The restaurant has quickly established itself as one of Charleston’s most beloved dining destinations with accolades from Garden & Gun, Eater, Resy, and more.
Whether at The Drifter, Petit Merci or Merci, Michael is guided by a philosophy of seasonality, locality, and meticulous attention to detail, crafting dishes that balance refinement with warmth.
Outside the kitchen, he enjoys spending time with Courtney and their two young children, Zoe and Luca.
